We Are Celebrating Life at Any Age! These IYSL lifestyle podcasts are you, for you, from people like you. We all share a lot as we mature in life and the journey is made even more special when we can celebrate it with someone else. In the LIVING WELL series, my guests will share their stories of being ordinary people, like you and me, and doing the extraordinary. Pivoting, building businesses, creating, renewing, and rewarding themselves by Living Well. We’ll also remind ourselves about the importance of living and being in awe. They will share their personal lives, their resilience, courage, maybe a failure, and most importantly, getting back up. My guests are willing to help others with their experiences, live life with great meaning, and give back with their hearts. Eating Well - As a spin-off for promoting healthier lifestyles (at any age!) I will share my own passions – beekeeping and plant-based lifestyle tips in the EATING WELL series. I’ll be interviewing other plants-first fanatics too! Plant-rich, plant-slant, plant-forward or whatever you want to call it, let’s just eat more veg! After all, at IYSL, we are about mind-body wellness, nature, and the natural, living soul-fully, and being social and out and about.

Growing up on a big farm in Eastern Colorado, KT Thompson’s life always revolved around agriculture and seasonal "stuff" - except a 13-month stint in which she had a normal shift job as a phlebotomist. She completed her undergraduate in Microbiology and currently is a high school science teacher in rural Northeastern Colorado.
In recent years, she has traveled to Europe with a group of students, began beekeeping, completed a Master of Science in Biology through the University of Nebraska in Kearney. Her first manuscript, "Supplemental Feeds and Foraged Corn Grain Dust: A Comparison of the Number of Days Survived In Vitro by Young Adult Honey Bees (Apis mellifera)" has been accepted for publication in the Journal of Apicultural Science. KT started teaching and mentoring other beekeepers and has completed all coursework towards her Journeyman Certification through the Colorado State Beekeepers Association.
She is the president of the Eastern Colorado Beekeepers Association and has been elected to the CSBA board as an advisor.
KT is a life-long learner, exploring life, discovering personal aptitudes and strengths, and focuses on the simple “yes” statements to continue self-development, be a bit impulsive, spontaneous and living life to the fullest.

Happy Apple Natural Kitchen is my comfort writing food and evolving recipe collection. I am a freelance writer, healthy recipe developer, former Kindergarten teacher, and most of all mama, as well as a dedicated endurance runner passionate about healthy living. In the past, I fell into a lonely power struggle with food. It was something I feared, obsessed over, and defined myself by via attempts to control my consumption of it. I lost myself and my health, relationships, and focus suffered.
One day hitting rock bottom, it struck me with renewed clarity, it was time to let go. I began learning to appreciate and understand food for what it is. It's fuel. Sustenance. It's a beautiful, powerful gift. It’s communion and community. It's a means to health, and it's meant to be shared.
Knowledge is progress. Making a commitment to continually educate myself around changing developments in health and nutrition provided a ladder out of a hole, but love transformed everything. Becoming a parent, I've reveled in the fascinating journeys and impact of healthy food in a whole way. Sharing joyful preparation and appreciation alongside my adventurous eater, I was struck in a new way by the incredible, impact of positive role modeling. This includes our relationship to food, but is most importantly about the way we love ourselves and each other.
I love experimenting in the kitchen. I love the bright colors, varied textures, and crisp sounds of produce on the cutting board. I love to bake, to gift from the heart, and to explore ways of being healthfully creative and economical. I hope we can share our discoveries and savor the enjoyments of life less processed. I hope you find something helpful in this collection of plant-based dishes that nourish our active family and fit with busy days and conscious budgets.

Claudia Bouvier grew up surrounded by incredible artisanal foods—and her large Italian family. After moving to the US from Sao Paulo for her career as a Civil Engineer she often dreamed about the fresh pastas of her childhood and the memories of her travels in Italy.
Claudia and her husband Ted launched Pastificio Boulder in 2018. Along the way, they’ve partnered with like-minded farmers committed to growing organic, heritage grains, milled their own fresh flour, and experimented with numerous small-scale pasta production and drying techniques. Two of Pastificio Boulder’s craft pastas received the 2021 Good Food Awards.
Claudia first learned the art of pasta making as a child, with her Italian grandparents. And later through professional classes at the International Culinary Center in NYC and at the Laboratorio Sfoglia e Pasta Fresca de “La Salumeria”, in Bologna, Italy. She also advocates for sustainable agriculture and serves on the boards of Growing Gardens and Slow Food Boulder.

Kay A Lisch, Ph.D. founded the ComPro Group, Inc. in 1990 to be a catalyst for bringing people into balance and companies into alignment. Her mission is to guide individuals, teams, and organizations to engage their work with wisdom and compassion to create benefit for others. ComPro has successfully worked with over 70 organizations spanning energy, telecom, chemicals, health care, consumer products, transportation, finance, technology, manufacturing, government, service, and education. Kay’s focus is informed by her D. in Organization Development from Ohio State University, her BA in Drama and English, from The University of Texas at Austin, and ongoing study of Buddhism, psychology, and social transformation. Along with her extensive corporate career, Kay and her x-husband, Jerry founded two centers for Tibetan Buddhism, which continue to provide meditation instruction and practice for thousands of students. Kay served as Board president for KTD (what is KTD) in Woodstock New York from 1985-95, where she supported the building of the monastery. KTD continues to serve as the seat for Tibetan Buddhism in the West.

Sarah Chartier, a Colorado bsiness owner who recently completed her certification as a financial coach. Sarah is also a franchise owner of The Spice and Tea Exchange Fort Collins, a Huge Packer Fan! Wisconsin beer, cheese, and Packers are in her blood!
Sarah is like many today – balancing being a business owner, a wife, a mother of a kindergartener and step-mom to a middle-schooler, juggling virtual schooling, continually expanding her own knowledge, keeping customers engaged, and, of course - shopping! Most importantly, learning to stay afloat when the waves are rough.
Sarah has made three career pivots, including to and from law enforcement (you have to hear this), and taking lessons learned along the way. Emily Olander is the cofounder of Root Shoot Malting Loveland Colorado. Emily and her husband Todd, cultivated Root Shoot Malting to specialize in the highest quality local grain and craft malt available to the brewing and distilling industries. For listeners who may not know, Northern Colorado is one of America’s most esteemed locations for craft beer and the up-and-coming CO distilling industry.
As 5th generation farmers in Loveland, Colorado, they respect the heritage of our region’s agriculture and partner with the beer industry. Their family has farmed in NoCo since 1926. Farming 1,500 acres of irrigated land in beautiful Loveland, Colorado, and harvest alfalfa, rye, wheat, corn, and barley. From the ground to your glass of beer or spirits, Root Shoot Malting serves the best of Colorado.
Root Shoot Malting has won many awards, including a first-place Malt Cup win at the Craft Maltster’s Guild Conference. They are also highly involved in preserving the longevity of Colorado agriculture in their special project The 100-Year Lease project, a documentary film produced by Root Shoot Malting and Traverse Image, conveys the significance of family farms, and the importance to preserve the longevity of Colorado agriculture.
This project is rooted in Colorado and inspired by a premise that the Olanders live and believe:

A dental hygienist part-time, Emily has a love for connecting with the craft brewing and distilling communities and brings her breadth and depth of resilience to Root Shoot Malting. While helping tell Root Shoot's agricultural story behind the scenes, she oversees most internal Root Shoot projects and communications.
Emily is a Colorado native, a Columbine High School graduate, and loves living near Fort Collins - the mecca for craft beer enthusiasts around the world! When not promoting craft malt (or dental health!), you can catch her at the local brewery with her husband, Todd, exploring Colorado outdoor adventures, or swinging the golf club.
