We Are Celebrating Life at Any Age! These IYSL lifestyle podcasts are you, for you, from people like you. We all share a lot as we mature in life and the journey is made even more special when we can celebrate it with someone else. In the LIVING WELL series, my guests will share their stories of being ordinary people, like you and me, and doing the extraordinary. Pivoting, building businesses, creating, renewing, and rewarding themselves by Living Well. We’ll also remind ourselves about the importance of living and being in awe. They will share their personal lives, their resilience, courage, maybe a failure, and most importantly, getting back up. My guests are willing to help others with their experiences, live life with great meaning, and give back with their hearts. Eating Well - As a spin-off for promoting healthier lifestyles (at any age!) I will share my own passions – beekeeping and plant-based lifestyle tips in the EATING WELL series. I’ll be interviewing other plants-first fanatics too! Plant-rich, plant-slant, plant-forward or whatever you want to call it, let’s just eat more veg! After all, at IYSL, we are about mind-body wellness, nature, and the natural, living soul-fully, and being social and out and about.

The Big Island is a dream. Volcanos, fern forests, cobalt blue vista views, and more. But did you know it was rated one of the most vegan-friendly states in the United States? This was comforting news as we were preparing our travel arrangements for a February trip. As a plant-forward chef and a full-on vegan husband, it’s a conundrum of where and what to eat when traveling. But, good news, Hawaii had a lot to offer the plant-based traveler! So let’s chat about how to eat plant-based on the Big Island with some off-the-beaten trail options.
As I did my research, I found many restaurants and cafes that offered plant-based options. From tofu to jackfruit to complete vegan cafes, I felt confident that if we wanted to go out to eat, we would have no problems at all. Rarely did I find a non-chain restaurant that didn’t have at least one vegetarian or vegan option – and it wasn’t spaghetti marinara.
Yes, Hawaii prizes its ahi tuna, homegrown beef, and pork, but there is an uptick in the interest in plant-based or vegan lifestyles possibly because they are ocean-bound and self-sufficient, or catering to many visitors. Although Oahu is the most vegan-friendly Hawaiian island, (bigger metro areas, more visitors, I get that) I give my hats off to the Big Island and its interesting options if you know where to look.

Evan Mimier is a longtime vegan who is happy to discuss plant-based eating with anyone who is interested in the topic! As a male vegan with a background in motorcycle mechanics and construction, he is certainly accustomed to being the only vegan in his circles. But as eating fads targeted at men, like the keto diet and carnivore diet, come and go, he continues to eat a whole food plant-based diet since the best longitudinal nutrition studies and his own before-and-after blood work supports that this is the optimal diet for disease prevention! 10 years ago, eating vegan was inherently more health-promoting than the standard American diet. But with the rise of the meat and cheese alternative industry, most of which is owned by the meat and cheese corporations themselves, Evan asserts that one must minimize the use of these substitutes to truly experience the health benefits of plant-based eating these days!

Josh Vaisman, MAPPCP, CCFP - CoFounder & Lead Positive Change Agent, Flourish Veternary Consulting
Leading a veterinary hospital is friggin’ hard work, and Josh understands the struggle first-hand. He has been a proud member of the veterinary community since 1998. In 2009, he took the leap into practice management and ownership and continued in those roles in two small-animal hospitals until 2018.
A lifetime optimist and overall “happy guy,” Josh was shocked to find himself
feeling spent, alone, and crying over breakfast while his surprised wife looked
on with disbelief. Recognizing he had burnt himself out, he made the difficult
decision to step away and recapture his authentic self.
Since then he’s dedicated his professional trajectory to elevating veterinary staff and teams, so they can authentically flourish in their work. To that end, he’s obtained certificates in areas such as Positive Psychology, Workplace Culture, and Building Effective Teams and a Master's level education in Applied Positive Psychology & Coaching Psychology. He co-founded Flourish Veterinary Consulting LLC to bring the knowledge he's obtained to life.
Josh lives in Colorado with his amazing wife, 3 insane parrots, 2 rescue pups who occasionally share the king-sized bed, a 7 lb cat known as the “Golden Child,” some fish tanks, and a few beehives. In his free time, he enjoys teaching about beekeeping, playing indoor soccer, and dreaming about moving to Kauai.

Kelly Mimier, the co-business owner of Forevergreen Farm, is here in this podcast to tell the story. Kelly works with her husband to run an urban micro-farm in Northern Colorado, specializing in super nutrient-dense microgreens for local home and chef delivery! Prior to delving into full-time self-employment, she worked in education and took a leap of faith by quitting her day job in September 2021, just 15 months after her first business sale. Growing vegetables is a year-round endeavor, but she loves to travel and live sporting and music events in her free time! She’s happy to connect with fellow growers and aspiring or seasoned entrepreneurs.
